Salmon and "Fried Rice"

The salmon is simply seasoned and pan fried. The fried rice was the real treat today. The "rice" is grated cauliflower!! Then it's mixed and panfried with a bunch of other vegetables, an egg, and "coconut aminos" which is a great substitute for soy sauce!! This tasted better than rice and as Jimmy says, "It's the only way to feed me an entire cauliflower in one sitting."

Marissa's Balls

Yeah, Balls!
Take 2lb ground grass fed beef, 1/2 cup of almond meal, a splash of almond milk, 1 egg, 1tb italian seasoning or fresh herbs, some pepper, a cup of chopped fresh spinach, 1/2 chopped onion, 2 minced garlic cloves and put them all together in a bowl. Mix together with your hands and form them into BALLS! Place balls on foil lined cooking sheet and bake for 30 minutes at 375. Yeah!!!

Jimmy's Slow-Cooked Ribs

This morning, Jimmy put a bunch of chopped, seasoned veggies (celery, carrots, bell peppers, and onions) in a crock pot and placed some seasoned grass-fed ribs on top. They were seasoned with sea salt, pepper, garlic, coriander, and a little rosemary. Then he turned the slow cooker on. Seriously. THATS IT!!!! Then we ate it with some amazing bbq sauce that he added jack daniels to. And some mixed veggies.  

Special Tip: Save the veggies you put in the crockpot to blend into gravy for another day!

Michelle added chicken, tomatoes, avocado, onions, and bell peppers to romaine lettuce leaves to create her own paleo fajita tacos!

Jimmy's Accidental Blueberry Pie

Jimmy is a genius. We were planning on making waffles, so we made a waffle batter: almond meal, almond milk, pecans, a little cocoa and cinnamon, egg whites, baking soda... and put it in the waffle maker and it didn't really work. So we put the crumble into a pan, and poured reduced blueberries, honey, and almond milk on top. This tasted exactly like blueberry pie. AMAZING!!

Fried Chicken and Spinach with Bacon

Jimmy dipped the chicken legs in egg, then coated the chicken with a mixture of arrowroot, almond meal, some spicy peppers, pepper, and garlic powder. Then he pan-fried those suckers. For the bacon, Jimmy sizzled the strips in their own fat and added spinach and mixed. Just so you know, we carefully selected "Beverly Hills Cop" as the movie of choice that night. There were also supposed to be waffles involved, but that didn't work out quite as nicely.

Bacon-Bison Chili

Alright, this one takes a long time, but if you put all the stuff in a crockpot in the morning, this stuff is golden by dinnertime. Pan-fry those veggies (carrots, broccoli, celery, etc), ground bison, and sliced bacon strips and put them in the crockpot with some garlic, tomato puree, and crushed tomatoes. You can also add spices like cumin, coriander, and even chipotle powder if you like it spicy.

Wild Boar Stuffed Pears

Jimmy carved out the inside of an asian pear and pan-fried wild boar, bacon, and pear all together. Then he put the meat back inside the carved pear and we got to eat the whole thing with our hands. There's obviously some mixed vegetables on the side. 

Elk and Chorizo Meatballs

We combined ground elk, chorizo, two eggs, an onion, garlic powder, and almond flour in a big bowl and mashed it together with our hands. Then we rolled the meatballs and panfried them in coconut oil. Fried up some veggies with rosemary and added some organic bbq sauce to the balls. 

Pan-Fried Porkchops with Cinnamon Honey Pear Glaze and Vegetable Rollups

 
Jimmy made this by caramelizing pear in coconut oil, then adding raw cinnamon honey. While that was simmering, he coated the porkchops with egg and almond flour and panfried those bad boys. The vegetables are just chopped and stir fried and tossed over huge romaine lettuce wraps.
